Quark soufflé

Ingredients for 4 servings:

  • 250 g quark
  • 20 g cornstarch
  • 2 eggs
  • 80 g sugar
  • ½ vanilla pod(s)

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Separate the eggs and beat the egg whites with a little sugar until stiff peaks form. Beat the egg yolks with about 70g of sugar and half the vanilla pod until creamy. Add the cornstarch and quark and mix everything well. Finally, carefully fold in the beaten egg whites. Fill three-quarters of the mixture into buttered and sugar-dusted baking dishes. Bake in a water bath at about 200°C for about 25 minutes. Do not use fan-assisted cooking, as they will not rise; only use top/bottom heat. These soufflés are guaranteed to be a success.
