Ingredients for 1 servings:

  • 3 small potatoes, organic, only the skin
  • oil
  • Salt
  • Pepper, from the mill
  • Chili flakes, from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Better to nibble than throw away…

Preheat oven to 200°C (400°F) top/bottom heat. Peel the potatoes and place the skins, light-side up, on a baking sheet lined with parchment paper (the potatoes can be used for another purpose). Drizzle the potato skins with a little oil, then sprinkle with salt, pepper, and chili. Place them in the oven on the middle rack for 15-20 minutes, until crispy (cooking time may vary depending on the oven). I was very skeptical and only used a small amount—but the chips are truly delicious! Important note: Make these chips only with organic potatoes that do not have any indication on the label that they have been treated! Regular stored potatoes are treated with “sleeping powder,” which is toxic and also seeps into the skin.
