Ingredients for 4 servings:

  • 500 g potatoes
  • 230 g flour, type 1050
  • 125 g butter, cold
  • 1 egg(s) , for the dough
  • 1 pinch of sea salt
  • 150 g crème fraîche
  • 1 egg(s)
  • 200g mozzarella
  • 1 bunch of chives
  • Mushrooms, as desired
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes in their jacket potatoes, peel them, let them cool, and cut them into small cubes. For the dough, put the flour, diced butter, an egg, and salt in a bowl and knead into a dough. Chill for about 30 minutes. Grease a springform pan, roll out the dough, place it in the pan, and press a small edge into it. Spread the potatoes on the dough. Mix the crème fraîche with the egg, salt, pepper, and chopped chives and pour over the dough. Dice the mozzarella and spread it on the quiche. Bake in a preheated oven at 175°C for about 35 minutes. If you like, you can also add some steamed mushrooms to the potato mixture; they also taste delicious.
