Ingredients for 2 servings:
- 4 medium-sized potatoes, washed and diced
- 125 ml mayonnaise
- 4 tbsp lemon juice
- 2 bunch spring onions, cleaned and sliced
- 2 eggs, hard boiled and finely chopped
- Lettuce (head lettuce), some leaves
- salt and pepper
- 4 tbsp oil
- 1 tbsp vinegar (white wine vinegar)
- 1 tsp mustard (Dijon mustard)
- 1 tbsp lemon juice
- 1 tbsp oregano
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the potato cubes in salted water for about 10 minutes until tender. Shake the salad dressing ingredients thoroughly in a shaker. Mix the drained potatoes with the dressing and let cool. Combine the mayonnaise and lemon juice. Add the potatoes, onions, and eggs and mix gently. Season with salt and pepper. Line a salad bowl with lettuce leaves and arrange the potato salad on top. Serve the potato salad with another salad, cold cuts, or fish.
