Ingredients for 4 servings:

  • 8 potatoes (salad potatoes)
  • 1 large onion(s)
  • ½ bunch parsley
  • 2 tbsp mustard
  • 1 small jar vegetable broth
  • some vinegar
  • some oil
  • some salt
  • some pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Boil the potatoes, peel them, cut them into chunks/slices (depending on your taste), and place them in a salad bowl. Finely chop the onion and add it. Finely chop the parsley and add it (dried or frozen parsley is also an option, 1-2 tablespoons). Add the vegetable stock (I usually use one vegetable stock cube to a small glass of hot water). Add the mustard, a dash of vinegar, a dash of oil, and plenty of salt and pepper. Mix everything together and season to taste. It also tastes delicious when the salad has been left to marinate for a while.
