Potato Salad Made from Sweet Potatoes and Smoked Pork

- Sweet potato
- Meatloaf
- Hard boiled egg
- Spring onions
- Pepper from the grinder
- Coarse salt
- Onion
- Chilli (cayenne pepper)
- Yogurt 30%
- White balsamic vinegar
- Olive oil
- Cream of sour cream
- Mint leaves
- Basil
- Peel the sweet potatoes and cut into cubes. Cook in salted water to which you add a pinch of chilli (cayenne pepper) for 15 minutes.
- During this time, cut the meat loaf, spring onions and onions into bite-sized pieces and fill a sufficiently large bowl.
- Mix the dressing with the ingredients in a bowl. Now add half of the dressing to the cut ingredients.
- Now drain the potatoes and add them to the bowl as well. Let the potatoes cool down a little. When the main heat has escaped add this to the rest of the prepared ingredients. Roughly divide the eggs and add.
- Now pour in the rest of the dressing and add a few more leaves of mint and basil. Mix well once and with e.g. enjoy a slice of baguette. I still had Kassler left over and fried it with it.
