Potato salad with bacon and without mayonnaise

Ingredients for 3 servings:

  • 1 kg potato(s), waxy
  • 1 package of diced ham, approx. 250 g
  • 2 onions
  • 1 tbsp mustard
  • 1 tbsp stock powder
  • 1 tsp vinegar
  • salt and pepper
  • Sugar
  • oil

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Boil the potatoes in their jacket potatoes, then peel and dice them. Fry the diced ham in oil and remove from the pan. Fry the diced onions until browned to your liking, using a generous amount of oil, which will be added to the salad later. Place everything in a large bowl. For the dressing: The ingredients only make a very small amount of dressing, and it should be thick. In a cup, mix about 1 tablespoon of stock powder, of your choice, with a tiny splash of warm water. Add 1 to 2 tablespoons of mustard, 1 teaspoon of vinegar, salt, pepper, and sugar to taste. The dressing shouldn’t be too strong in the cup, as it will transfer a lot of its flavor to the potatoes. Finally, mix everything together and enjoy.
