- 800 g Waxy potatoes
- 250 g Low fat quark
- 1 good shot Soda
- 2 tsp Mustard
- 4 tbsp Cucumber water
- 4 Gherkins
- 1 bunch Spring onions
- Pepper
- Salt

Preliminary remark
- I love potato salad, especially in summer and for grilling. But salads with majo are always very heavy and high in calories. And especially in summer you want to eat something that is easy to digest and not as heavy as a stone in your stomach. I've been experimenting for a long time and this quark dressing salad is my absolute favorite. Tastes good and is much lighter than the salads with fatty mayo.

- Boil the potatoes as jacket potatoes, then peel them while they are still hot, cut into slices and let them cool down - ideally overnight.
- Stir the low-fat quark with the sparkling water, the quark gets a wonderful creamy consistency through the sparkling water, without even having seen the cream. Now stir in the mustard and cucumber water and season very strongly with salt and pepper.
- Finely dice the pickles and cut the spring onions into fine rings and add to the quark dressing together with the potatoes, mix well and leave to steep in the refrigerator for at least 2 hours.
