Potato salad with cucumber and ham cubes

Ingredients for 5 servings:

  • 1.3 kg jacket potatoes (from the previous day, peeled)
  • 1 cucumber(s)
  • 1 ½ tbsp vinegar
  • 2 tbsp oil
  • 1 onion(s), finely diced
  • 180 g ham, diced
  • 1 tsp, heaped stock, granulated
  • salt and pepper

Instructions

Working time approx. 35 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 35 minutes

Slice the potatoes. Heat oil in a pan and fry the onion and ham cubes. Add approximately 150 ml of water, bring to a boil, and stir in the granulated stock. Add the vinegar and season with pepper. Slice the cucumber into thin sticks and fold in. Pour the hot onion mixture over the potatoes and let it marinate well. Season the salad again with salt and pepper.
