Smoked salmon tartar

Ingredients for 4 servings:

  • 1 large egg(s), hard-boiled
  • 350 g smoked salmon, finely diced
  • 1 medium-sized red onion(s), diced very finely
  • 1 bunch of chives, cut into fine rolls
  • ½ tsp mustard
  • 2 tbsp lemon juice
  • 4 tbsp olive oil, good
  • Salt and pepper, freshly ground, black

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the egg, finely chop the egg white, and reserve the yolk. Mix everything well, from the egg white (without the yolk) to the olive oil, and season with salt and pepper. Serve the tartar on plates. Press the egg yolk through a sieve and garnish the tartar with it.
