Potato salad with green beans

Ingredients for 4 servings:

  • 1 kg potatoes
  • 500 g beans, green, fine (Kenya beans are well suited)
  • 75 g smoked bacon, diced
  • e.g. olive oil
  • 3 shallots, diced
  • e.g. red wine vinegar
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cook the potatoes in their skins until tender. Meanwhile, cook the prepared beans in salted water for 8-10 minutes, then rinse with cold water. Fry the bacon in a pan with olive oil, add the shallots, then deglaze with a generous splash of vinegar and let it simmer slightly. Peel the potatoes, slice them, and place them in a bowl. Add the beans. Pour over the hot vinegar and bacon mixture and season with salt, pepper, and more vinegar, if desired. If the salad is too dry, add a little more olive oil.
