Ingredients for 4 servings:

  • 500 g onion(s), finely chopped
  • 200 g bacon, streaky, diced
  • 2 tbsp olive oil
  • 4 tbsp paprika powder
  • 1 tsp sugar or honey
  • 2 tbsp tomato paste
  • 800 g potatoes, diced
  • 1 liter of beef broth, homemade! very important
  • 250 ml red wine
  • 1 bunch parsley, chopped
  • 2 garlic cloves
  • 1 pinch(s) nutmeg, freshly grated
  • 1 tbsp sour cream, optional

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Heat the olive oil and sauté the onions with sugar. Add the bacon and tomato paste. Add the paprika, then deglaze with red wine and the broth. Add the potato cubes to the broth. Season with salt and pepper and simmer for 30 minutes. Finally, press in the garlic cloves and season with nutmeg. Stir in the parsley. If desired, add a tablespoon of sour cream.
