Potato tortilla with cooked ham

Ingredients for 4 servings:

  • ½ kg potatoes, waxy
  • 200 g cooked ham
  • 1 tbsp olive oil
  • 2 small onions
  • 1 bunch of chives
  • 5 eggs
  • 1 red bell pepper(s)
  • salt and pepper
  • Cayenne pepper
  • Paprika powder

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Either grate or thinly slice the peeled potatoes. Fry them with the diced onions in a pan with oil for about 15 minutes. Season with salt and pepper. Whisk the eggs with some of the finely chopped chives and season to taste with salt and pepper, and cayenne pepper or paprika if desired. Dice the bell peppers and ham and fold them into the potatoes. Add the egg mixture and let it set for about 10 minutes. Carefully turn the potatoes (use a plate if necessary) and let it set on the other side for about 10 minutes. Garnish with the remaining chives before serving. Serve with a fresh salad.
