Ingredients for 4 servings:

  • 1 kg potato(s), floury
  • 2 onions
  • 2 eggs
  • 1 egg yolk
  • 40 g flaxseed, crushed
  • Salt and pepper, white

Instructions

Grate the potatoes and onions. Transfer the mixture to a tea towel and squeeze out the liquid. Add the eggs, egg yolk, and ground flaxseed to the potato and onion mixture and season with salt and pepper. Cover and let stand for 30 minutes. Then bake the batter in a waffle iron until crispy. Serve with herb curd and salad or applesauce, depending on your taste. It can also be used as a side dish to meat dishes.
