Ingredients for 1 servings:
- 2 eggs
- 1 m.-sized potato(s)
- 1 m.-sized tomato(s)
- 1 small onion(s)
- some sunflower oil, or similar
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Breakfast or snack to fill you up and for busy days
First, peel the potatoes and onions, then quarter them and slice them thinly. Cut the tomatoes into thin half slices. Heat a small pan and add a little sunflower oil. First, add the potatoes and fry them. Turn the potatoes over once. Continue frying until almost cooked. Then add the onions and tomato pieces and top with two eggs. Season with salt and pepper, and after a few minutes (depending on the desired consistency), remove from the heat and serve immediately. Tastes great with freshly toasted bread. Keeps you full for a long time and is quick to prepare. Tip: If you need it to go faster, use one cooked potato from the day before.
