Ingredients for 4 servings:

  • 2 kg plums, washed, pitted, halved
  • 500 g honey, liquid
  • 1 tsp cinnamon
  • ½ tsp cloves
  • 1 tbsp lemon peel, untreated, grated
  • n. B. Rum

Instructions

Working time approx. 1 hour; Rest time approx. 6 hours; Total time approx. 7 hours

Plum jam

Combine all ingredients in a large pot. Cook for about 10 minutes, stirring constantly. Then puree the mixture with a hand blender. Meanwhile, preheat the oven to 150°C (top/bottom heat). Pour the plum jam into a baking dish and leave to thicken in the oven at 150°C for 4-6 hours. Stir occasionally! The plum jam is ready when it is hot and spreadable and has a blackish-brown color. Immediately pour into well-cleaned jars while still hot, making sure there are no air pockets. Add a teaspoon of rum to the jam in each jar and seal the jars airtight.
