Prawns with Hot Currant Sauce and Asian Noodles

The perfect prawns with hot currant sauce and asian noodles recipe with a picture and simple step-by-step instructions.

  • 1 packet Mie or fried noodles
  • 1 Carrot
  • 1 Ginger (the size of a thumb)
  • 3 Garlic cloves
  • 1 tbsp Peanut oil
  • 1 bunch Spring onions
  • 200 g Red currants
  • 1 tbsp Currant liqueur
  • 1,5 tsp Honey
  • 1 Onion
  • 3 Dried chilli peppers
  • 3 Pepper
  • 0,5 tsp Tomato paste
  • 50 ml Water
  • 3 tbsp Soy sauce
  • 3 tbsp Salt
  • 3 tbsp Sweet paprika powder
  • 25 King prawns

The currant sauce:

  1. Cut the onion and a clove of garlic into small cubes. Core the chilli peppers and cut into fine rings. Fry the onions and garlic in a saucepan with oil over low heat. Then add the chilli peppers and fry briefly. Then the currants, honey, tomato paste and water are added, the whole thing is now briefly boiled again. Now we reduce the sauce over medium heat for about 10 minutes. Finally pass the whole thing through a sieve and season with salt, pepper and paprika to taste.

The Asian noodles:

  1. Bring a saucepan with water and a pinch of salt to a boil. Then add the pasta and cook for about 4 minutes. (Applies to Mie noodles, all others please look at the packaging) Then drain the noodles and rinse with cold water. Meanwhile, peel the carrot, clove of garlic and ginger. The garlic and ginger are cut into fine cubes, the carrots into fine strips approx. 40 mm long. Fry the whole thing in a pan. Wash and peel the spring onions and cut into fine rings. Now we add the noodles and fry them for about 10 minutes together with the spring onions. The whole thing is seasoned with soy sauce and a little pepper.

The prawns:

  1. Fry the prawns in a hot pan with a little oil until they are still nice and translucent inside. If you like, you can add salt and a little lemon juice to taste. Now it can be served.
