Ingredients for 1 servings:
- 250 g flour, type 550
- 15 g yeast, fresh
- 125 ml milk, lukewarm
- 25 g butter, soft
- ½ tsp salt
- 1 liter of water
- 1 pack of baking soda (Kaiser-Baking soda)
- e.g. salt, coarse or cheese, grains, poppy seeds, sesame
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 10 minutes
Make a yeast dough from the ingredients and knead vigorously until the dough is elastic and pulls away from the bowl. Let the dough prove until it has doubled in size. This takes about 60 minutes. Divide the dough into 4 pieces, then divide each of them into 3 pieces and braid them into small braids. Cover and let prove for another 30 minutes. Bring the water to a boil and slowly add the baking soda. Be careful, it will foam a lot. Once the lye is boiling, reduce the heat and cook the braids on each side for about 30 seconds. Place on a baking sheet lined with baking paper and sprinkle with salt, cheese, or seeds, if desired. Then bake the braids in a hot oven at 180°C for about 20 minutes.
