Ingredients for 4 servings:
- 3 pretzel sticks, pretzels or rolls
- 1 liter meat broth
- 1 egg yolk
- 100 ml cream
- 1 bunch of chives
- nutmeg
- pepper
- Salt
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cut the pretzel sticks, pretzels, or rolls into small pieces. Pour the meat broth over them and let them soak for an hour. Then bring everything to a boil. Simmer over low heat until the pretzels have dissolved. Purée the soup with an immersion blender and bring to a boil. Whisk the egg yolk with the cream and stir into the soup. Season to taste with salt, pepper, and grated nutmeg. Sprinkle with chives.
