Protein Baked Oats with Blueberries

Ingredients for 3 servings:

  • 175 g oat flakes, fine
  • 30 g walnuts
  • 45 g chocolate protein powder
  • 200 g blueberries
  • 10 g honey
  • 3 eggs
  • 350 ml milk 1.5%
  • 5 g baking powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Combine the oats, walnuts, protein powder, and baking powder in a bowl and mix together. Then add the milk, eggs, and honey and mix with a spoon. Finally, add the blueberries and stir into the mixture. Divide the mixture between 3 bowls and bake in a preheated oven at 180°C (convection oven) for about 30 minutes (if frozen berries are used, the baking time will increase by about 5 minutes). These oat cakes are perfect for meal prep. They will keep in the refrigerator for about 3-4 days. Nutritional values ​​per serving: 522 kcal, carbs 53 g, protein 35 g, fat 18 g. This is my basic recipe, which can be varied as desired, e.g., with different fruit, different protein powder, different nuts; vegan milk is also possible.
