Ingredients for 1 servings:

  • 275 g oat bran or 250 g gluten-free oat or buckwheat flakes
  • 25 g sweet lupin flour
  • 6 eggs, separated
  • 500 g low-fat curd cheese
  • 2 tsp sesame seeds
  • 2 tsp flaxseed
  • 3 tsp sunflower seeds
  • 1 pack of cream of tartar baking powder
  • 1 ½ tsp salt
  • 1 tbsp bread spice mix
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

gluten-free, high protein

Preheat the oven to 200°C (top/bottom heat). Grease a bread pan or line it with baking paper. Beat the egg whites until stiff peaks form. In a mixing bowl, combine the dry ingredients. Add the egg yolks and quark and mix with a mixer until smooth. Finally, lightly fold in the stiff peaks. Pour the batter into the prepared pan and bake for about 50 minutes.
