Protein bread with quark, almonds and linseed

Ingredients for 1 servings:

  • 6 eggs, size M
  • 500 g low-fat curd cheese
  • 100 g almonds, ground
  • 100 g flaxseed meal
  • 4 tbsp chia seeds
  • 4 tbsp flaxseed flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • ½ tsp bread spice mix

Instructions

Working time approx. 10 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 55 minutes

Low carb bread, very tasty and easy

Combine the eggs and quark. Mix all other ingredients and stir in. Pour the dough into a loaf pan and let it rest for 30 minutes. Preheat the oven to 180°C fan/convection oven and bake the bread for about 60 minutes. Then remove the bread pan and let the bread stand in the switched-off oven for about 10-15 minutes. Cool completely on a rack before eating. Note from Chefkoch.de: Because flaxseed contains a relatively high cadmium content, the German Federal Center for Nutrition recommends consuming no more than 20 g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
