Protein dinner with cottage cheese

Ingredients for 1 servings:

  • 200 g cottage cheese, 0.4%
  • 50 g cream cheese, 0.2%
  • 100 g cocktail tomatoes
  • 100 g mushrooms
  • 5 slice(s) sausage (cold cuts, low-fat e.g. ham, chicken or turkey breast)
  • Herbs
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Low-carb, low-fat

Combine the cottage cheese and cream cheese in a bowl and mix well until creamy. Now add the herbs. I like to use parsley, chives, and basil, but you can of course change them to your liking. Season well with salt and pepper. Wash and slice the tomatoes, and dice the cold cuts. Clean the mushrooms and also cut them into thick slices. Sauté the mushrooms in a non-stick pan without oil. Once they’ve browned nicely, stir the liquid into the cream cheese mixture along with the tomatoes and cold cuts. I like to let it sit in the fridge for another 1-2 hours, but you can also eat it right away. The recipe can easily be varied by adding bell peppers or cucumber.
