Prussian fish casserole

Ingredients for 4 servings:

  • 500 g cod fillet(s)
  • 200 g bacon
  • 1 jar gherkins, thick
  • 3 onions
  • 1 package of tomatoes, chunky
  • 1 package of tomatoes, pureed
  • salt and pepper
  • Sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Cut the fish fillet into cubes (approx. 4 x 4 cm). Cut the cucumber into thumb-thick slices. Remove the rind from the bacon and thinly slice the bacon. Cut the onions into eighths. Mix everything in a casserole dish, lightly breaking up the onions. Bake for approx. 25 minutes at 180°C. Meanwhile, combine the pureed and chopped tomatoes in a saucepan, bring to a boil, and season with a little salt, plenty of pepper, and about 1 teaspoon of sugar. Serve the casserole with the tomato sauce and freshly cooked rice.
