Ingredients for 1 servings:

  • 1 pkt. Puff pastry, rolled out ready to bake on baking paper
  • 1 egg yolk
  • 1 tbsp milk
  • 4 tbsp apricot jam
  • 2 tbsp lemon juice
  • 1 tbsp almonds, ground
  • 1 tsp gingerbread spice
  • 2 tbsp granulated sugar

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut out the puff pastry using Christmas cookie cutters. Place on a baking sheet lined with baking paper, mix the egg yolk with the milk, and brush the cookies with it. Bake in a preheated oven at 200°C (top/bottom heat) for about 15 minutes until golden brown. In the meantime, heat the apricot jam and mix it with the lemon juice, ground almonds, and gingerbread spice. Brush the jam onto the still-hot cookies and sprinkle with sugar.
