Puff pastry parcels with spicy filling

Ingredients for 1 servings:

  • 1 pkt. puff pastry (250 g)
  • 1 bell pepper(s), red
  • 2 chili peppers
  • 1 bulb(s) of fennel
  • 1 stalk(s) leek
  • 100 g Coppa (alternatively air-dried ham)
  • ½ bunch chives
  • 1 tbsp clarified butter
  • Salt
  • pepper
  • 1 egg yolk
  • some milk
  • Oil, for greasing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 180 degrees Celsius. Clean the vegetables and cut into thin strips. Heat clarified butter and briefly fry the vegetables and coppa in it. Stir in the chives. Season with salt and pepper. Cut the puff pastry into rectangles and cover with the vegetables. Mix the egg yolk with the milk. Brush the edges of the pastry with this mixture. Press the edges together to form pockets. Brush a baking sheet with oil. Brush the puff pastry parcels with the remaining egg-milk mixture, place them on the baking sheet, and place them in the oven. Bake for approximately 25 minutes.
