Pumpkin Bolognese

Ingredients for 3 servings:

  • 1 m.-sized pumpkin(s) (Hokkaido)
  • 1 onion(s)
  • 500 g minced beef
  • 3 tbsp olive oil
  • Salt
  • pepper
  • 1 tsp, heaped thyme, dried (or a few fresh stalks)
  • ¾ liter beef broth
  • 200 ml cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

without tomatoes

Finely dice the onions and cut the pumpkin into approximately 2 cm cubes. Fry the minced meat in olive oil until crumbly. Add the onions and fry for about 3 minutes. Add the thyme and pumpkin cubes and fry briefly. Pour in the broth and simmer with the lid on over medium heat for about 30 minutes, until the pumpkin is soft and the sauce is slightly thickened. Finally, stir in the cream and season with salt and pepper. Serve with pasta.
