Ingredients for 2 servings:

  • 1 pumpkin(s) (e.g. Hokkaido)
  • 1 pack of soy granules (soy shreds), or 500 g minced meat, mixed
  • 2 tbsp tomato paste
  • 500 ml vegetable stock
  • 1 cup soy cream (Soy Cream Cuisine) or cream
  • 4 tbsp cheese, grated
  • salt and pepper
  • a few stalks of parsley
  • some oregano
  • 1 onion(s)
  • 2 cloves garlic
  • 30 g butter

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Cut the pumpkin into small pieces. Chop the onions and garlic. Add the soy strips prepared according to the package instructions or the minced meat and fry in the butter with the onions and garlic. Add the pumpkin and pour over the broth. Let it simmer for about 15 minutes. Then add the spices and cream and mix with the tomato paste. Pour the mixture into a baking dish and top with cheese. Sprinkle with a little oregano and bake for 10 minutes at 200°C. Goes well with fish.
