Ingredients for 1 servings:

  • 500 g flour
  • 150 g oat flakes
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 200 ml oil (sunflower, wheat germ oil, etc.)
  • 100 g sugar, white
  • 150 g brown sugar
  • 1 egg(s)
  • 350 g pumpkin flesh, boiled, pureed and drained
  • 1 tbsp vanilla sugar
  • 100 g nuts, chopped (pecans or walnuts)
  • 100 g raisins

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pumpkin cookies with oat flakes makes about 40 pieces

Combine all dry ingredients except the sugar and set aside. Whisk the egg, oil, and sugar until creamy, then add about 100g of the pumpkin flesh and continue whisking. Then alternately stir in the pumpkin flesh and the flour mixture. Finally, fold in the raisins and nuts. Preheat the oven to 175°C (350°F). Line a baking sheet with parchment paper and drop tablespoonfuls of batter onto the sheet. Be careful, as the batter will spread slightly. Bake for about 15-20 minutes, or until the cookies are golden brown.
