Ingredients for 1 servings:
- 250 g wheat flour, type 550
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ¾ tsp cinnamon
- ½ tsp ginger, freshly grated
- ⅛ tsp nutmeg, freshly grated
- 1 pinch(s) of Allspice, ground
- 115 g butter, soft
- 100 g sugar, white
- 55 g sugar, brown
- 2 eggs
- ½ tsp vanilla extract
- 185 g pumpkin flesh, pureed
- 60 ml buttermilk
- 75 g raisins
- 55 g walnuts or pecans, chopped
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Combine all dry ingredients. Stir together all wet ingredients. Add the dry ingredients and mix with a wooden spoon until just beginning to moisten. Pour the batter into greased muffin cups and bake in a preheated oven at 180°C for 25-35 minutes.
