Ingredients for 1 servings:
- 500 g pumpkin(s) (e.g. Hokkaido, nutmeg)
- salt water
- 150 ml orange juice or multivitamin juice
- 50 ml white balsamic vinegar
- 100 g sugar
- 2 tsp harissa, possibly more
- ½ tsp pepper
- ½ tsp curry powder
- ½ tsp cinnamon powder
- Salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
Cut the pumpkin into small pieces and boil in salted water until soft. Drain the water and puree the pieces. Add the spices, juice, and balsamic vinegar and simmer for about 20 minutes. Rinse the jars with hot water and pour in the ketchup.
