Pumpkin Muffins with Apples

The perfect pumpkin muffins with apples recipe with a picture and simple step-by-step instructions.

For the dough

  • 1 teaspoon Sugar brown
  • 1 teaspoon Orange and lemon peel
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground clove powder
  • 200 g Flour
  • 250 g Sugar
  • 2 teaspoon Ginger bread spice
  • 0,5 teaspoon Baking soda
  • 1 Pr Salt
  • 1 Egg
  • 60 ml Oil
  • 150 g Apple cubes
  • 80 g Flour
  • 35 g Sugar
  • 35 g Melted butter
  • 1 Pr Ground cinnamon

  1. Line a muffin tin with paper liners and set aside
  2. Wrap the pumpkin pulp with the cinnamon, sugar, clove powder, orange and lemon peel in a piece of aluminum foil. Cook in the preheated oven at U / 180 ° C – approx. 40 minutes. Remove from the foil, drain and puree, set aside.
  3. For the dough, mix the flour, sugar, spices, baking soda and salt in a bowl. Whisk the egg and add to the batter together with the pumpkin puree and oil and stir in. Fold the apple cubes into the batter.
  4. For the crumble mix the flour, sugar, cinnamon and the melted butter and rub crumbly with your hands.
  5. Fill 2/3 of the dough into the molds and spread the crumble on top
  6. Bake the muffins in the preheated oven O / U – heat for approx. 35 minutes … chopsticks test !!!
  7. Let the muffins cool in the tray for 5 minutes and then place on a wire rack
