Ingredients for 1 servings:
- 400 g pumpkin(s), e.g. B. Hokkaido
- 150 g mountain cheese
- bunch of thyme, fresh
- 200 g butter or margarine
- tsp salt
- 4 eggs
- 300 g flour
- 2 tsp baking powder
- 100 ml milk
- 100 g ham, diced

Coarsely grate the pumpkin and dice the cheese. Wash the thyme, shake it dry, and remove the leaves. Preheat the oven to 180°C (160°C fan-assisted oven). Grease and flour the tin. Cream the butter and salt until creamy, then beat in the eggs one at a time. Mix the flour with the baking powder and briefly stir into the batter in two portions, alternating with the milk. Fold in the thyme leaves and grated pumpkin, then mix in the ham and cheese cubes. Pour the batter into the prepared tin and bake the pumpkin pie in the preheated oven for approx. 60 minutes. Do the skewer test (there should be no liquid batter left on the skewer). Allow the pumpkin pie to cool, then remove from the tin. Tip: For a vegetarian version, replace the ham cubes with the same amount of roasted cashews. You can of course also use other herbs, e.g. For example, oregano, dill and basil can be used instead of fresh thyme.
