Quesadillas with lime chicken

Ingredients for 3 servings:

  • 1 garlic clove(s)
  • 1 lime(s), organic, grated peel only
  • 1 tbsp olive oil
  • 1 tsp salt
  • pepper
  • 350 g chicken breast fillet(s)
  • 6 wrap(s) , (wheat tortillas)
  • 200 g tomatoes
  • 1 yellow pepper
  • 200 g Gouda, grated
  • 100 g cream cheese

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Delicious quesadillas with fruity chicken marinade

For the marinade, peel the garlic clove and press it through a garlic press. Grate the lime zest. Mix the garlic and lime zest with 1 teaspoon of salt, a little pepper, and 1 tablespoon of oil. Rub the mixture into the washed chicken breast fillets and set aside for 10 minutes. Meanwhile, wash the tomatoes and thinly slice them, and also wash the bell peppers and cut them into thin strips. Fry the chicken breast fillets in a little oil for about 15 minutes on each side, let them cool slightly, and then chop them into small pieces. Spread half of the tortillas with cream cheese. Top the coated half with the marinated chicken strips, tomatoes, and bell peppers, seasoning with salt and pepper to taste. Finally, sprinkle with Gouda cheese and fold the tortilla over. It’s best to leave some space around the edges so that you can press the two halves together slightly. The cream cheese acts as a “glue.” Now fry the whole thing in a hot pan for about one minute on both sides and cut into triangles.
