Pumpkin, potato and carrot mash

Ingredients for 1 servings:

  • 500 g pumpkin flesh
  • 300 g potatoes
  • 125 g carrot(s)
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic, can also be omitted
  • 30 g butter
  • n. B. Salt
  • n. B. Pepper, freshly ground
  • 1 pinch(s) nutmeg, freshly grated
  • Water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean, peel, and dice the pumpkin, potatoes, and carrots. Sauté in a little water with a pinch of salt until soft. Drain the remaining water. Steam the vegetables thoroughly until dry. Dice the onion and sauté in butter. If desired, add a clove of garlic and sauté briefly. Add the onion mixture to the vegetables. Season with pepper and mash with a potato masher. Season with salt, nutmeg, and pepper. Serve with a fried egg. The mashed potatoes are a great accompaniment to stir-fries.
