Pumpkin seed oil – egg dumplings

Ingredients for 4 servings:

  • 320 g flour, smooth
  • 8 large eggs, large
  • 2 large egg yolks, large
  • Pumpkin seed oil
  • 100 ml milk
  • salt and pepper
  • 50 g bacon (hamburger bacon)
  • 40 g butter
  • Chives, chopped for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

In a bowl, combine the flour with 2 eggs, 2 egg yolks, 2 tablespoons of pumpkin seed oil, milk, salt, and pepper using a wooden spoon to form a smooth dough. Gradually press the dough into a large pot of boiling salted water using a spaetzle grater and cook the dumplings for about 5 minutes. Drain and refresh with cold water. Cut the bacon into small cubes and fry in melted butter. Add the dumplings and fry for about 4 minutes over medium heat, stirring occasionally. Beat 6 eggs, pour the mixture over the dumplings, season with salt and pepper. Mix everything well and let the eggs set. Serve, drizzle with a little pumpkin seed oil, and sprinkle with chives. Serve with a leaf salad.
