Ingredients for 4 servings:
- Salt
- 300 g flour
- 7 eggs
- nutmeg
- 220 ml milk
- 1 bunch of chives
- 2 tbsp butter

Dough dumplings with egg, recipe from Austria
Bring a large pot of salted water to a boil. Quickly mix the flour, 3 eggs, and the milk in a bowl until you have a smooth, not too stiff dough. Season with salt and nutmeg. Add a little more milk if necessary. Immediately scoop out dumplings (long dumplings) from this dough, ideally using a spoon dipped in hot water. Add the dumplings to boiling salted water and simmer over low heat for about 8 minutes until tender. Meanwhile, beat 4 eggs. Wash the chives and cut them into rolls. Heat the butter in a large pan. Pour the cooked dumplings into a large sieve and drain well. Toss the dumplings in the hot butter and pour over the beaten eggs. Lightly season with salt and toss briefly until the egg sets. Serve quickly, garnishing with the chives. Serve with a green salad.
