Ingredients for 4 servings:
- 300 g peas, young, frozen
- 200 g cream
- ⅛ liter vegetable broth
- 4 tsp crème fraîche
- some chives, finely chopped
- nutmeg
- Cayenne pepper
- Salt
- pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Bring the broth to a boil in a 2-liter saucepan, add the frozen peas, bring to a boil briefly, add half of the cream, remove from the heat, and blend thoroughly. Return to the heat, bring to a boil again, add the remaining cream, and season generously with salt, pepper, nutmeg, and cayenne pepper. Ladle into four warmed soup bowls, add a teaspoon of crème fraîche to the center of each, and garnish with chives. Serve immediately!
