Quark and fruit casserole

Ingredients for 4 servings:

  • 3 eggs
  • 75 g sugar
  • 1 tsp flavoring (vanilla flavor)
  • 1 lemon(s), juice and grated peel
  • 75 g cornstarch
  • 500 g quark (low-fat quark)
  • 350 g fruit (e.g. apricots, raspberries, apples)
  • 40 g almonds, chopped
  • 1 tbsp butter or margarine

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Separate the eggs. Combine the sugar, egg yolks, and vanilla essence with the lemon juice and zest, cornstarch, and quark. Beat the egg whites until stiff peaks form and fold into the quark cream. Trim, wash, and finely chop the fruit, if desired. Pour half of the quark cream into a well-greased baking dish, top with the fruit, and spread the remaining quark mixture on top. Sprinkle with almonds and dot with margarine or butter. Bake the casserole at 200°C (gas mark 3 / fan oven: 175°C) for 50 to 60 minutes until golden brown.
