Quark and herb pancakes without egg

Ingredients for 2 servings:

  • 250 g low-fat curd cheese, dry
  • 60 ml milk
  • 1 cup herbs (parsley, chives, tarragon, borage), chopped
  • 150 g semolina
  • 4 tbsp breadcrumbs
  • 1 tsp, leveled salt
  • ½ tsp pepper
  • 1 tsp Worcestershire sauce
  • 1 tsp ajvar
  • 150 g ham, lean, raw or cooked
  • 4 tbsp margarine

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Mix the quark with a little milk, semolina, breadcrumbs, herbs, salt, pepper, Worcestershire sauce, and ajvar, and season to taste. The mixture shouldn’t be too thin; add a little more milk if you prefer. Cut the ham into small cubes and mix them loosely into the quark mixture. Heat the margarine in a pan. Scoop out portions of the mixture with a spoon, flatten them slightly, and fry in hot oil until golden brown on both sides.
