Ingredients for 4 servings:

  • 1 kg quark
  • 20 m.-sized potatoes
  • 200 g bacon
  • 250 g cheese, grated
  • 1 large onion(s)
  • salt and pepper
  • Herbs as desired (e.g. parsley, chives, dill)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes with their skins on, then peel and let cool. Cut the bacon into small cubes and fry in a pan, then let cool slightly. Peel and dice the onion and mix with the quark, herbs, and rendered bacon. Season with salt and pepper. The quark can be a bit spicier than the herb quark used for the sandwiches. In any case, do not stir in any milk or other liquid (except perhaps the fat from the rendered bacon), otherwise too much liquid will collect in the baking dish after baking. Now lightly grease a baking dish or four single-serve dishes and alternately layer the potato slices and quark. Once you’ve used up all the ingredients, sprinkle on the cheese. Bake in a preheated oven at 180°C (fan oven) for 20-30 minutes.
