Quark and Raisin Rolls

The perfect quark and raisin rolls recipe with a picture and simple step-by-step instructions.

  • 100 g Raisins
  • 5 tbsp Milk
  • 125 g Butter
  • 1 packet Dry yeast
  • 400 g Flour
  • 1 pinch Salt
  • 80 g Sugar
  • 1 packet Vanilla sugar
  • 2 piece Eggs
  • 125 g Quark
  1. Heat 4 tablespoons of milk in a saucepan and melt the butter in it. Let it cool down a little and dissolve the yeast (fresh yeast is also possible, of course) while stirring. Let the raisins soak in a little hot water.
  2. Separate an egg. Set the egg yolks aside for later. Knead the yeast dissolved in the milk-butter mixture with flour, salt, sugar, vanilla sugar, an egg white and a whole egg and the quark to a smooth dough. Let rise in a warm place for 30 minutes.
  3. Add the raisins. Knead the dough again on a floured work surface and knead in the raisins. Shape a roll and make twelve pieces out of it. Shape the dough pieces into balls.
  4. Place the rolls on a baking sheet and let rise again for about 30 minutes until they have enlarged significantly. Mix the egg yolk with 1 tablespoon of milk and brush the bread rolls with it. Bake the rolls in a preheated oven at 180 ° C for 20 minutes.
