Raisin and Quark Rolls

The perfect raisin and quark rolls recipe with a picture and simple step-by-step instructions.

  • 500 g Spelled flour or wheat flour
  • 1 packet Dry yeast
  • 250 g Lowfat quark
  • 150 g Soft butter
  • 2 Pc. Eggs size L
  • 1 Pc. Lemon zest
  • 1 tsp Ground cinnamon
  • 0,5 tsp Iodized salt
  • 3 tbsp Honey
  • 5 tbsp Water
  • 100 g Raisins
  • 1 Pc. Egg yolk
  • 1 tbsp Milk
  1. Mix the flour and yeast well.
  2. Add the quark, softened butter, eggs, lemon zest, cinnamon, salt, honey and water and mix well until you have a smooth dough. Then knead in the raisins, cover the dough and let rise to double the height.
  3. Knead the dough well on the floured table top, divide into 20 pieces and shape into round rolls, flatten slightly and place on a baking sheet lined with baking paper. Cover and let rise again up to twice the height.
  4. Beat the egg yolks with lukewarm milk and brush the rolls. Put the baking sheet into the oven preheated to 180-200 ° and bake for about 30-35 minutes until golden brown.
