Quark apple pie without a base

Ingredients for 1 servings:

  • 100 g butter (soft)
  • 2 egg yolks
  • 120 g sugar
  • 500 g quark (low-fat quark)
  • 50 g semolina
  • 1 tbsp pudding powder, vanilla
  • ½ vanilla pod(s) or a packet of vanilla sugar
  • ½ lemon(s), zest + juice
  • 2 egg whites
  • 25 g sugar
  • 2 large apples (peeled and cut into small pieces)
  • Butter, in flakes
  • 1 tbsp sugar + cinnamon

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 170°C fan/convection oven. Use an 18cm or 24cm springform pan! Beat the softened butter, sugar, and egg yolks until fluffy. Now add the low-fat quark, semolina, pudding powder, and vanilla bean pulp. Finally, fold in the stiffly beaten egg white and sugar mixture and the apples. Butter the pan and sprinkle with breadcrumbs. Add the batter and sprinkle with cinnamon and sugar. Then bake in the oven for 40 minutes! Vanilla ice cream with whipped cream goes great with this, or simply eat it lukewarm.
