Quark cake without a base

Ingredients for 1 servings:

  • 100 g butter (room temperature)
  • 6 eggs
  • 400 g sugar
  • 1 lemon(s)
  • 1,000 g quark (low-fat quark)
  • 100 g semolina
  • 1 packet of baking powder
  • 1 tbsp flour
  • 1 pinch of salt
  • possibly raisins, 3 tbsp
  • Butter, for greasing
  • 3 tbsp breadcrumbs

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the butter, 6 egg yolks, sugar, grated zest, and lemon juice with a mixer until fluffy. Then add the quark, semolina, baking powder, flour, and salt and beat everything until creamy. Beat the egg whites until stiff peaks and fold in. If you like, you can add the raisins at this point. Grease the springform pan, then distribute the breadcrumbs in the pan and turn the pan over so that any excess crumbs fall out. Now pour in the quark mixture and bake in the oven at 175°C for 60 minutes. Please do the wooden skewer test. The cake will rise a lot while baking, but will shrink slightly after cooling.
