Ingredients for 4 servings:

  • 250 g quark
  • 250 g flour
  • 4 eggs
  • Salt

Instructions

Mix flour, eggs, and quark into a tough dough and let it rest for a while. Then, using a spaetzle grater, slice the dough into boiling salted water and bring to a boil briefly. The dumplings are ready when they float to the surface. They go well with roasts or goulash. Tips: Low-fat quark makes the spaetzle very soft, so I prefer half- or full-fat quark, which makes them more stable. If you don’t want to weigh the dough, use 2 cups of flour for 1 cup of quark.
