Quark dumplings

Ingredients for 4 servings:

  • 500 g quark
  • 180 g flour, up to 200 g if required
  • 2 eggs
  • 40 g margarine
  • 1 pinch of salt
  • e.g. plum(s) or apricots as filling
  • 200 g butter
  • 200 g flour
  • 200 g sugar

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Like from grandma

Using a hand mixer, combine the quark, flour, eggs, margarine, and a pinch of salt. Knead the dough thoroughly again and roll it into a sausage about 3 cm long. Cut the sausage into pieces about 3 cm long. Wrap each piece of dough around a plum or apricot. Cook the dumplings in lightly boiling salted water for about 20 minutes. It’s important that they float to the surface. Heat the butter in a pan. Sprinkle the flour and sugar in the melted butter. When the dumplings are done, drain well and roll them in the crumbles. The quark dumplings taste best with hot vanilla sauce.
