Quark rolls

Ingredients for 6 servings:

  • 500 g flour
  • 500 g quark
  • 2 eggs
  • 1 cup milk, lukewarm
  • 2 tsp baking powder
  • Salt
  • Sugar
  • Oil for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quark pancakes; old family recipe

First, dissolve the baking powder, salt, and sugar in lukewarm milk; then combine this mixture with the flour, quark, and eggs. Stir everything thoroughly until a smooth dough forms. If the mixture tastes sweet, you’ve added enough sugar; otherwise, simply add more sugar. Be careful, as the dough is quite sticky, so it’s best to use a sturdy mixer. Once the dough is ready, heat the oil in a pan. Scoop out a tablespoonful of dough at a time and add it to the pan with the hot oil. Now carefully press out the portions (the rolls should be about 1/2 cm thick) and bake each side until golden brown. It works better if you dip the tablespoon in hot water before pressing each portion apart. Immediately after baking, sprinkle the rolls with sugar again and serve them hot with applesauce. They’re also delicious cold. This is a recipe from my grandmother, one of my favorites. She herself doesn’t know anymore why they are called “rolls.”
