Quark with mandarins and biscuits

Ingredients for 8 servings:

  • 500 ml cream
  • 2 packets of vanilla sugar
  • 2 packs of cream stiffener
  • 1 kg quark
  • 200 g sugar
  • 2 small cans of mandarin oranges, drained
  • 700 g biscuits (butter biscuits)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whip the heavy cream with the vanilla sugar and cream stiffener and chill. Put the quark in a bowl and mix with the sugar until creamy. Fold in the stiffly whipped cream. Fold in the mandarin oranges (set some aside for decoration). Crush the biscuits (in a mortar and pestle or in a freezer bag with a rolling pin). You can fold in the crushed biscuits or – this is how I do it – layer them with the quark mixture as follows: biscuits, quark mixture, biscuits, quark mixture. Finally, smooth the top and decorate. Chill for a few hours and then serve. It tastes best if you let it sit at least overnight. Then the biscuit mixture will have softened nicely and the flavor will have developed beautifully.
