  • 2 liters of buttermilk (3.25% fat)

For those who don’t live in Germany or no longer live in Germany: Pour the buttermilk into a large roasting pan. Place the uncovered pan in a preheated oven at 200°F (100°C) for 2 hours. Then let it cool. Once cooled, drain through a linen cloth for about 1.5 to 2 hours. This yields approximately 750 g to 1 kg of quark. Important: Do not use low-fat buttermilk! This will reduce the flavor.
